Perhaps one of the most nostalgic coffees in the world, the story of the Malabar monsooned coffee begins during the period of the British Raj and the East India Company. Green coffee beans from the Malabar Coast were shipped in clipper hulls for three months, during which time, the sea-air — fueled by the monsoon winds — made the beans swell and acquire a golden color. This air also rendered the beans with unique wine, must and chocolate flavors. Europeans loved this coffee and enjoyed it for centuries until clippers were substituted by cargo ships, reducing the traveling time of the coffee drastically and thus, the flavor and color of the beans beyond recognition. Faced with discontent from consumers, coffee traders quickly found ways to bring back the monsooned coffee taste by replicating the same conditions on land during the monsoon. These connoisseurs from Mangalore take great pride in processing the beans for 18 weeks. To help balance moisture absorption, the beans are carefully raked, bulked and re-bagged regularly. They also meet the highest standards of excellence by being UTZ certified — an internationally recognized set of criteria for the economic, social and environmentally responsible production of raw materials, such as coffee, cocoa, and tea.
